    1 lb lean ground beef
    1 medium onion, chopped
    1 cup fresh mushrooms, chopped
    1 medium zucchini, chopped
    1 large carrot, chopped
    4 garlic cloves, minced
    2 tsp chili powder
    Dash Texas Pete (or other hot sauce)
    2 tomatos, diced
    1/4 Cup minced fresh cilantro
    salt and pepper to taste


1. Cook the beef in a large skillet. Remove from Skillet, drain, and keep warm

2. In the same skillet, combine everything but the tomatos and cilantro. Cook until tender

3. Add the tomatos and cilantro and cook for a few minutes until tomatos are mushy.

4. Return the beef to the pan and cook for a few more minutes until all the flavors are well combined.

Makes 8 servings.

This is great for tacos or quesadilla filling with about 1/8 cup of cheese per serving.
