Introduction

This soup is a beautiful sunny yellow in the bowl with dark green kale and purple potato chunks, and when I entered all the ingredients in the nutrition tracker... it turned out it was practically perfectly balanced too... with lots of potassium. This soup is a beautiful sunny yellow in the bowl with dark green kale and purple potato chunks, and when I entered all the ingredients in the nutrition tracker... it turned out it was practically perfectly balanced too... with lots of potassium.

Ingredients

    Small bunch of "Dianosaur" or Russian Red Kale tough stems removed and rolled up (remoulade) and slice really finely. then chop across the threads a couple of times (so the soup isn't a pain in the neck to eat)

    2qt 2% milk
    1/2 c chopped onion
    4 small potatoes (I used purple ones)
    2 or 3 Tbsp flour (depending on how thick you like your soup)
    1/2 (to saute) and 1 Tbsp oil or butter (just enough to make a roux)
    1T curry powder to taste
    salt and pepper

Directions

Put the milk in a non reactive 3qt pot and put it over low heat to warm.

prep the veggies
microwave potatoes just until done. cut into chunks when cool enough to handle.

saute the onion in the 1/2 T oil(or use 2Tbsp water with just a tsp of oil) until transparent; hold in a bowl

put the oil in the saute pan over med heat and add the flour
stir until just before the flour browns

add 2c hot milk to the roux and stir with whisk until it bubbles and thickens.

Add the thickened mixture to the hot milk in the soup pot.

Add the sauted onions and kale bring to just before boil

Season to taste with curry powder, salt and pepper.
