Introduction

my stepdad makes this a lot in the summer, but it's good anytime. my stepdad makes this a lot in the summer, but it's good anytime.
Number of Servings: 8

Ingredients

    Eggplant
    Zucchini
    Yellow squash
    Red Onion
    Carrots
    Mushrooms
    1/4 cup Olive Oil
    1 Tbsp Dijon mustard
    1 Tbsp Honey
    3 Tbsp Balsamic Vinegar
    Salt & pepper to taste
    1 Tbsp Herbes de'Provence
    4-5 cloves of garlic, sliced

Directions

Chop veggies and garlic into bite size pieces. Combine in large roasting pan with remaining ingredients, Toss to coat evenly. Cover and bake in 425 degree oven for 30 minutes.
