Ingredients

Endive, 5 head (remove)
Green Peppers (bell peppers), 2 cup, strips (remove)
Peppers, sweet, red, raw, sliced, 1 cup (remove)
Yellow Peppers (bell peppers), 4 pepper, large (3-3/4" long, 3" dia) (remove)
Portabella Mushrooms, 400 grams (remove)
Olive Oil, Extra Virgin, 4 tbs (remove)
*Balsamic Vinegar, 2 tbsp (remove)
Salt, 3 dash (remove)
Pepper, black, 3 dash (remove)
Basil, 2 tbsp (remove)
Rosemary, dried, 2 tbsp (remove)
Oregano, ground, 2 tbsp (remove)
Directions
This is a very simple and easy dish. You can substitute any vegetable you like as well. 1 count of each vegetable and a quarter of the dressing this will yield provide you have at least 4-5 vegetables will yield 4-6 servings. This recipe is in bulk since I cooked this for a very large family as a signature dish.
Slice all your vegetables lengthwise and make sure they are good bite sizes. Place the veggies in a baking dish. Turn your oven's broiler on or turn on the oven to 350 degrees to preheat.
Combine the olive oil, balsamic vinegar, salt, basil, rosemary, oregano and black pepper as you would for salad dressing and stir thoroughly. If you have a jar with a lid, shake it to make sure all the ingredients are thoroughly incorporated - this is a great method of making this marinade.
Brush the marinade over the veggies liberally until coated and all the marinade is gone.
Bake/broil the veggies for appromixately 20 minutes or until mushrooms are soft.
