Ingredients

    2 cans of tomatoes
    1 can (3 cups) chick peas
    2 large zucchini, diced
    8 oz. mushrooms, chopped
    1 large red pepper, diced
    1 large onion, diced
    3 cloves garlic
    oregano
    mint
    basil

Directions

Chop all vegetables and place them in a slow cooker. Add other ingredients. Stir. Put the lid on. Cook on high at least 4 hours , and not more than 8. Or cook on low for 6-10 hours.

Makes 20 1 cup servings.

Serve with cheese or nuts sprinkled in it if you like. Don't forget to add the nutritional info for these additional foods.
