Delicious low fat baked potato soup! Delicious low fat baked potato soup!
Number of Servings: 12


    8 Potato's
    8 Stalks of Celery
    3 cups Carrots (sliced)
    Onion minced
    16 oz Chicken Broth
    Bacon Bits

    Cream for Soup
    2 tsp butter
    2 tsp flour
    1 cup milk


Add all vegetables and chicken broth let simmer about 20-25 minutes until potatoes begin to break down and veggies are soft.

In sauce pan mel the 2 tsp of butter shortly after slowly mix in 2 tsp of flour (this will create the cream base to go in the soup and has way less fat then heavy cream etc.) one you have a yellow paste slowly wisk in the milk salt to taste.

add white sauce to the veggie mix and simmer another 5 -10 min.

Serve with bacon bits chedder and chives on top with a dollup of sour cream.
