Ingredients

    2 CUPS DRIED SPLIT PEAS
    8 CUPS WATER
    2 ONIONS, CHOPPED
    2 STALKS CELERY WITH LEAVES, CHOPPED
    4 CARROTS, CHOPPED
    1 BAY LEAF
    2 TSP SALT
    PEPPER (TO TASTE)

Directions

Rinse Peas, chop onions & carrots, add everything to the pot and bring to a boil. Lower temp., cover, and cook on low heat for 1 1/2 to 2 hours. Remove bay leaf and puree. Especially good (and good for you) when topped with cheddar cheese cubes. Yum!

    I was afraid to try this without the ham (I've just recently become vegetarian) but I was very impressed! Even my husband liked it. Will definitely make again! - 1/2/15
