Ingredients

    1 cup of Kashi GOLEAN cereal
    2/3 c nonfat milk
    1/2 c ground flaxseeds
    2 T Splenda Brown Sugar Blend
    3/4 c shredded or chopped apple
    1/2 c shredded carrot
    1 1/4 c whole wheat flour
    1/2 c egg whites
    1 T canola oil
    1 tsp vanilla
    2 tsp cinnamon
    1/2 scoop of BSN Dessert Whipped Vanilla Protein Powder (or other brand)
    1 tsp salt

Directions

Set Oven: 375
Cooking Time: 20 min

Combine all ingredients. Portion evenly into prepared muffin/cupcake wrappers. Bake until toothpick comes out clean or muffin bounces back to the touch.
