Introduction

Ingredients

    2 cups cooked bulgur, chilled (you can use couscous if you cannot find bulgur)
    4 tablespoons lemon juice
    1 cup chopped cucumber (peeled)
    1/2 cup chopped raw red onion
    12 oz shrimp, cooked, peeled and coarsely chopped
    1 pint grape or cherry tomatoes
    1/2 cup feta cheese, crumbled
    1tsp salt
    1tablespoon of olive oil
    2 tablespoons parsley, chopped
    1 tsp black pepper

Directions

Make the bulgur or couscous and add 2 tablespoons lemon juice. Chill in the fridge for at least 1 hour. In the meantime, put shrimp (cooked, peeled, and chopped) in a large bowl with the rest of the lemon juice (2 tablespoons) and 1/2 tsp of black pepper. Set aside. Chop up cucumber, red onion, and parsley. Add the cucumber, red onion, parsley, pint of tomatoes, feta cheese,olive oil, and cooled bulgur. Mix all of the ingredients together and add salt and pepper (to taste or omit if desired). This makes about 4 servings and it should be served chilled.
