Introduction

This is a very thick and hearty soup that is perfect for those cool fall or winter dinners. It's very simple to prepare and ingredients can be substituted if you do not like one of them. I like to serve it with Tortilla chips on the side or broken into it. Sour cream, cheese (cheddar, colby or monterrrey jack), salsa and or pico de gallo all go well with it. Ingredients

    2 lb. ground turkey, browned and drained
    2 cans Ranch Style Beans (In some areas these are called Texas Style Beans)
    2 cans Yellow Hominy
    2 cans stewed tomatoes, crushed (use your favorite flavor, I like the mexican style)
    1 can corn
    1 can chili
    2 packages Taco seasoning mix
    1 to 2 cups water to keep consistency to soupy while cooking.

Directions

Brown ground turkey, drain. Place all ingredients in large stew pot and bring to boil. Lower heat, cover and simmer 30 minutes. Best if cooked ahead of time and allowed to cool in refridgerator for several hours before reheating and serving. Serve with condiments of your choice. Good with cornbread, crackers or tortilla chips. Try with salsa, cheese, sour cream and/or pico de gallo.

Makes 8 hearty servings, about 1 3/4 cup each.
