    1 package buttermilk biscuits
    1 tbsp butter
    1 lb boneless skinless chicken breast, cut into 1 inch cubes
    2 garlic cloves, minced
    1 onion, chopped
    1 10oz package frozen vegetables
    1 cup chicken broth
    1 tsp dried thyme
    1/2 tsp black pepper
    2 tbsp cornstarch
    3/4 cup low fat (2 %) milk


1. Preheat oven to 400. Prepare the biscuits according to package directions.

2. Meanwhile, melt the butter in a large nonstick skillet over medium-high heat. Add the chicken, onion, and garlic; cook stirring occasionally, until the chicken is almost cooked through, about 6 minutes. Add the mixed vegetables. Cook, stirring occasionally, until the vegetables are tender, about 4 minutes. Stir in the broth, thyme, and pepper; cook 2 minutes.

3. Blend the cornstarch with the milk in a small bowl, and stir into the skillet. Bring the mixture to a boil and cook, stirring constantly until thickened, about 1 minute. Top the skillet with the biscuits and serve.

Serve with a mixed green salad.
