Introduction

This is my version of a yummy Peruvian Dish. This is my version of a yummy Peruvian Dish.
Number of Servings: 2

Ingredients

    Mashed Potatoes (I use 80 calorie instant)
    Onions
    Bell Pepper
    Soy Sauce
    Tomato Paste
    Cumin
    Salt & Pepper
    Ground Beef (Recipe has 93% Lean)
    .5 cup of water

Directions

This is for two people, double the recipe for four people. Cook onions and bell peppers until soft add ground beef, brown and then add spices, tomato paste and water. Simmer for 10-15 minutes or until hald of the water has been absorbed. Layer 1 cup mashed potatoes on bottom of a bowl, add 1/2 of meat mixture, then cover with 1 cup of rice and pack down firmly but not too tight. Serve.
