Ingredients

    1 c dry whole wheat couscous, cooked according to package
    1 can corn, drained
    1 can black beans, rinsed and drained
    4 medium green onion, chopped
    1 red bell pepper, chopped
    2 garlic cloves, minced
    1/4 c lemon juice
    1/4 C olive oil
    salt and pepper to taste

Directions

Cook couscous according to directions. Let cool. Place all othe ringredients in a bowl and mix together. May add cilantro, jalapeno, or lemon rind to enhance flavors.

Add cooled couscous and mix thoroughly. Let refrigerate and serve.

    YUM! I used to get this salad at Target, but now I can make it myself, and it's more healthy too. - 3/4/09
