Ingredients

    1 tbsp olive oil
    1 onion diced
    10 baby carrots shredded
    2/3 c mushrooms, chopped
    3/4 pounds extra lean ground beef
    1 baked potato shredded
    4 eggs
    2 Tbsp water
    1 1/2 oz shredded mozzarella cheese

Directions

Preheat oven to 350 degrees
1. Heat olive oil in skillet.
2. Add diced onions, shredded carrots, diced mushrooms. Cook until tender.
3. Add ground beef and cook mixture until meat is barely pink.
4. Aadd shredded potatoes, mix and finish cooking mixture until meat is no longer pink.
5. While meat mixture is cooking, whip eggs and water until fluffy.
6. Pour eggs over meat mixture and cook until set.
7. Top with shredded cheese. Place in oven until cheese is browned.
