Ingredients

    2 medium red potatoes
    2 cloves garlic
    1/4 cup skim milk or fat free plain yogurt
    1 tbsp prepared basil pesto
    pinch of freshly ground sea salt
    pinch of ground black pepper

Directions

Scrub potatoes, do not peel. Cook with the garlic cloves in small amount of boiling water.
Drain and mash by hand. Stir in milk or yogurt, the pesto and salt and pepper. Serve at once. Makes 3 servings.
Note: the pesto may be substituted with 2 tsp. whole grain Dijon mustard and 1 chopped green onion.
