    1 lb ground turkey
    1.5 cups tomato sauce (I used my own which was low sodium)
    1/2 cup pureed pumpkin (I used fresh not canned)
    1 cup onions chopped
    1 bell pepper diced
    6 cloves of garlic minced
    1 small carrot finely shredded
    1 Tbsp red wine vinegar
    1tsp paprika
    1 tsp black pepper
    Dash of salt


Heat skillet over medium heat add turkey cook a couple minutes until its about half way cooked. Add onions, garlic, bell pepper. Cook through. Add shredded carrrots, paprika and black pepper cook 2 mintues add pureed pumpkin and tomato sauce and red wine vinegar. Simmer on very low heat covered for 10 minutes.

Serve over rice, lentils or on a bun.

Makes about 8-1/2 cup servings
