    4 oz smart taste rotini or penne
    1 can rotel tomatoes and chilis
    1 can sliced mushrooms, drained
    1 medium sweet onion, diced
    1 sweet bell pepper, diced
    3 servings smoked turkey sausage (louis rich), cut into bite size pieces
    2 tbsp minced garlic
    .5 cups fat free shredded mozzarella
    1 cup of water or chicken broth


Makes 3 big servings (main dish) or 4 servings as a medium sized portion.

If you want it less spicy, it would probably still be good with plain diced tomatoes instead of rotel ones.

Heat a skillet sprayed with nonstick over medium heat. Add onions, peppers and garlic and cook, stirring constantly, until onions are softened.

Add in remaining ingredients, except for cheese. Cover, bring to a simmer. Continue simmering until pasta is done and most of the liquid is absorbed. During the last five minutes or so sprinkle the cheese on the top so it has time to melt.

Serve with a nice salad; a quick, nutritious , one dish meal for busy nights.
