    eggplant
    1/2c bread crumbs
    1/2c pasta sauce
    2 tomatoes
    1/4 parmesan cheese

Directions

slice eggplant into circles and place in baking dish. Top with sauce, crumbs and cheese and bake at 375 for 15 to 25 minutes until bubbly
