Introduction

Great salad for parties or as a side dish. Great salad for parties or as a side dish.
Number of Servings: 6

Ingredients

    1 cup quinoa
    2 cups low sodium chicken broth
    1 red sweet pepper diced
    1 cup cherry tomatoes halved
    1 cup black beans (canned/drained)
    2 scallions chopped

Directions

Rinse quinoa.

Put 2 cups of chicken broth in pot with 1 cup quinoa. Bring to boil. Lower to simmer and cook until liquid is absorbed (about 10 - 15 minutes). After it is down let it cool.
Chop up the red pepper and 2 scallions.
Once quinoa cooled mix in scallions, red pepper, tomatoes and black beans.
Serve!
