Introduction

A healthy alternative to scrambled eggs with TONS of dietary fiber!! A healthy alternative to scrambled eggs with TONS of dietary fiber!!
Number of Servings: 1

Ingredients

    - 1 tbsp margarine
    - 1/2 cup sliced fresh mushrooms
    - 10 cherry tomatoes, sliced
    - 1 clove garlic, minced
    - 1 cup fresh spinach, rinsed
    - 1/2 block firm or extra firm tofu, well pressed and crumbled
    - 1 tsp soy sauce
    - 1 tsp lemon juice
    - salt and pepper to taste

Directions

- Sautee tomatoes, garlic and mushrooms in olive oil for 2 to 3 minutes.

- Reduce heat to medium low and add spinach, crumbled tofu, soy sauce and lemon juice. Cover and cook for 5 to 7 minutes, stirring occasionally.

- Sprinkle with a dash of salt and pepper before serving.

- Enjoy!
