Ingredients

    1 (11-0z) can white shoepeg corn, drained 1(15.5) can black beans, rinsed and drained 1 package (4 0z) crumbled feta cheese 1/2 c onions chopped 1/2 c olive oil extra light tasting (not extra virgin) 1/2 c splenda 1/2 c apple cider vinegar 1/2 tsp garlic powder salt , pepper to taste

Directions

Combine corn, black beans, feta cheese and onions. Seperately combine oil, splenda, vinegar, garlic powder, salt and pepper in food processor or dressing shaker. Refrigerate. One hour before serving, combine dry ingredients with dressing and toss well. Keep refrigerated until ready to serve. Serve with baked Fritos scoops. NOTE: serves 8
