A very tasty way to start your day and a great way to use up some of your garden zucchini! A very tasty way to start your day and a great way to use up some of your garden zucchini!
Number of Servings: 8


    1 frozen prepared pie crust (9")
    6 beaten eggs or egg substitute (Egg Beaters)
    2 c grated zucchini
    16 oz cooked bacon
    1 lg scallion, chopped
    1 c shredded sharp cheddar cheese


Preheat oven to 400 degrees.

Place pie crust into 8" pie pan, pressing it down into the edges of the pan. Use a fork and press down on the crust on the outer edges of the pan to make little indentations. Use the fork to poke holes in bottom and sides of the crust for ventilation.

Brush some of the egg mixture all over the crust and bake in the preheated oven for about five minutes.

While it is baking mix together the zucchini, scallion, and cheese with the remainder of the egg mixture.

After five minutes take out the crust and pour in the ingredients. Bake for 20 minutes until the eggs are firm.

Let sit for at least 10 minutes before cutting. Enjoy!
