    2 chicken breasts
    2 400g tins white beans (butter, cannelini), rinsed.
    4 1/2 cups of water
    2 1/2 cups of chicken stock
    1/2 cup barley
    2 large carrots
    2 stalks of celery
    1 400g tin of corn kernels, drained
    1 leek
    1 onion
    1 clove garlic
    juice and zest of one lemon
    3 tsp fresh thyme leaves (or several sprigs)
    1 bay leaf
    black pepper to taste


Place the stock, chicken breasts, barley, and 2 1/2 cups of water in the pressure cooker. Bring to high preasure, cook 10 mintues, release pressure.
While waiting, chop remaining vegetables into chunks.
Remove chicken and cube, return to pot with all remaining ingredients except water.
Bring to pressure, cook a further 10 minutes.
Add remaining water and heat through.

Makes 6 hearty servings (400-500g).
Serve with bread and salad.
