Introduction

This brisket is soo good. I like serving it with potato/squash latkas.

The gravy is made from the vegetables and juices.

Ingredients

    6 lb Beef Brisket, trimmed
    2 large onions, sliced (or diced rough)
    2 large carrots, sliced (or diced rough)
    32 oz Marcella wine (Burgandy is also a good one to use.
    2 tbsp Rosemary fresh
    2 tbsp Basil, fresh

Directions

Pre heat oven to 250 degrees.


In a large roasting pan place 1/2 of the onions, carrots, rosemary and basil. Place meat on top of vegetable mixture. Then place rest of vegetables on top of meat. Pour wine over meat and vegetables. Cover tight and cook at 250 degrees for 4 to 6 hours.

Remove meat from pan, cover. Puree vegetables and juices from roast. (If making a head of time, chill gravy and remove any fat that comes to top of gravy.).
