A really healthy, tasty side dish A really healthy, tasty side dish
Number of Servings: 6


    1 sm cauliflower
    1/2 tsp ground ginger
    1 tsp Coriander
    1/2 tsp sugar
    1 tsp ground ginger
    1 tsp ground tumeric
    1 tsp salt
    1 cup low fat coconut milk
    1 tsp grated lime rind
    2 tbsp lime juice
    lime slices.


Wash & trim cauliflower. Leave whole.
Place coconut milk, chillies, tumeric, coriander, ginger, suger & salt in pan large enough to hold the cauliflower & bring to the boil.
Place the cauliflower in the liquid and cook for 15 mins or until the cauli is just cooked.
Mix in the lime rind & juice.
Serve with the coconut mixture poured over the cauli as a sauce and garnish with lime slices.
