Introduction

These are really good. They are low enough in calories too that you can serve with some homemade quacamole and some black beans on the side. These are really good. They are low enough in calories too that you can serve with some homemade quacamole and some black beans on the side.

Ingredients

    1/2 onion, cut into slices
    1/2 green, yellow, & red bell peppers, sliced
    Fajita seasoning packet
    aprox. 20 oz. of chicken, grilled, sliced into strips
    1 TB evoo

Directions

Grill chicken. Slice onion and peppers. Saute in evoo. Take out and drain on paper towel. Throw chicken into hot skillet the peppers just came out of. Toss around for a minute or two, then add peppers back in. Mix fajita seasoning with 1/4 c. water, then add to skillet.

Take out, add to warm tortilla. Or can be eaten plain. Both very good. :)

Grilling the chicken first gives it a great flavor. I use Pepper Lime seasoning when I grill chicken. It's the BEST chicken seasoning I've ever found. Love it!
