Ingredients

    1 c split peas (4c cooked
    1 1/2 c carrots, chopped
    1/2 c shallots, chopped
    1/2 T extra virgin olive oil
    2 qts filtered water (more as needed)

    Sweat shallots and carrots in heavy pan with lid shallots and carrots until beginning to caramelize.

    Add split peas, salt and water, simmer until tender.
