Ingredients

    Smart Balance Whipped Buttery Spread, 4 tbsp
    Granulated Sugar, .25 cup
    *Splenda, ..25 cup
    Egg substitute, liquid (Egg Beaters), .25 cup
    Vanilla Extract, 1 tsp
    Lemon Extract, 1 tsp.
    *Flour, all purpose, 1.5 cup
    Bran Flakes, 1 cup
    Baking Powder, 2 tsp
    Baking Soda, .5 tsp
    Sour cream, fat free, 1 cup
    Banana, fresh, 1.5 cup, mashed
    Walnuts, .5 cup, chopped

Directions

Preheat oven to 350 F. In a food processor, cream together margarine and sweeteners. In a medium bowl, mix together bran flakes, flour, baking powder, soda, and salt. Process into
margarine mix, alternating with bananas and sour cream. Add walnuyd and turn off processore immediately. Spray two 12 cup mffin tins, and pour in batter, avout 1/2 cup batter to each muffin. Bake at 350 F for 50 to 55 minutes. Makes 24 muffins. Serving size one muffin.
