Ingredients

    3 medium butternut squash, peeled & cubed
    3 tbsp olive oil
    1 tbsp dried (or 2 tbsp fresh) parsley
    2 cloves garlic, minced
    1 tsp salt
    1/2 tsp pepper
    1/3 cup parmesan cheese, grated

Directions

Peel and cube 3 medium butternut squash. Combine oil, parsley, garlic, salt & pepper and toss in squash to coat. Place in 13x9 baking dish, uncovered, and bake at 400* for 50-55 minutes until squash is tender. Sprinkle parmesan cheese over the top during the last 10 minutes of bake time.
