    -4 cups bulgur wheat, squeezed dry
    -1 large cucumber, finely chopped
    -2 tomatoes, finely chopped
    -1 bell pepper, finely chopped
    -1/4 cup small onion
    -1/2 cup lemon juice
    -2 Tablespoons canola oil
    -1/2 teaspoon garlic powder
    -1 teaspoon salt
    -pepper to taste


Mix bulgur, cucumber, tomatoes, onion, and bell peppers thoroughly thoroughly. Wisk together lemon juice, oil, and spices. Pour over bulgur mixture. Let meld for at least two hours.
