Great low carb spicy breakfast burrito with plenty of protein! Very filling. Great low carb spicy breakfast burrito with plenty of protein! Very filling.
Number of Servings: 2


    4 oz of shredded precooked chicken breast off the bone
    3 large eggs
    1/4 cup of chopped onions
    1/4 cup of diced tomatoes
    1/4 cup of diced banana peppers
    1 slice of bacon
    1 tsp of cumin powder
    Dash of salt
    2 La Banderita Low Carb tortillas
    Canola spray (about 5 sprays)
    2 tbsp Daisy Light sour cream


First spray a pan with canola spray and saute the onions, tomatoes and banana peppers till soft. Next add the eggs, salt and cumin powder. Go ahead and cook the bacon while the eggs are cooking. Cook both till done. Finally heat up the tortillas, add 1/2 of the warmed up chicken breasts, half the eggs, and 1 tbsp sour cream. I add hot sauce as well. Fix the next one the same way. Wrap into burritos and enjoy! Serves 2.
