Ingredients


    1 Chicken breast cooked and dice
    5 corn tortillas
    1 can diced tomatoes
    1 pkg Ortega enchilada sauce
    1.2 C onions chopped
    1 Cup cheddar/jack cheese grated

Directions

Boil and dice chicken. Prepare enchilada sauce according to package directions. Chop onions and shred cheese(s) and set aside. Warm tortillas . Place in oven proof casserole dish which has been sprayed with Pam. Add tomatoes to sauce mix and bring to boil. Spoon a little sauce in bottom of casserole dish and place 1 tortilla in dish. Start to layer ingredients in this order: Cheese, onion, chicken sauce, ending with cheese layer on top. Bake at 350 degrees for 30 minutes, or until cheese has melted and casserole is bubbling. Serves 6 generous portions.
