Number of Servings: 8


    1 large carrot - diced
    1 celery stack - diced
    1 c. chopped onion
    1 c. chopped bell pepper
    1/4 c. chicken broth (nsa)
    1 1/2 c. sliced mushrooms
    3 cloves minced garlic
    14 ozs can diced tomatoes (nsa)
    28 ozs can crushed tomatoes (nsa)
    6 oz. can tomato paste, (nsa)
    2 tsb. Splenda
    1 tsb. each of oregano, basil, thyme
    1 bay leaf
    * nsa - no sodium added


1. In a large pot saute onion, bell pepper, carrots, celery, and garlic in chicken broth until tender.
2. Add canned tomatoes including juice.
3. Stir in splenda, tomato paste, and spices.
4. Bring to a boil. Reduce heat and simmer covered for 30 minutes.
5. Uncover and simmer for another hour.
6. Remove Bay Leaf.
7. Place in blender or food processor and blend until carrots and celery are no longer visible.
