Ingredients

    1 tablespoon extra virgin olive oil
    1 medium raw onion
    1 pound lean ground beef
    3 tablespoons flour
    1 teaspoon salt
    1/2 teaspoon black pepper
    2 cans yellow sweet corn
    4 cups mashed potatoes
    1 can beef broth

Directions

Preheat oven to 350.

Heat olive oil in large skillet over medium heat. Add chopped onion and saute until golden. Add ground beef and cook until browned completely. Drain fat.

Salt and pepper beef to taste. Sprinkle beef with flour and mix and saute for two minutes. Add beef broth, stirring constantly until beef mixture is thickened.

Pour beef mixture into a large casserole dish, spreading to cover the bottom. Pour cans of corn over the beef, covering it entirely, then spread the mashed potatoes over the corn to the edges, sealing them.

Put casserole in oven uncovered for 30 minutes. Serve hot.
