    6 eggs, well beaten
    2 cups nonfat milk
    1 tsp. salt
    1 tsp. cinnamon
    1/2 cup sugar
    10 large apples, peeled, quartered, and sliced very thin
    Granulated sugar


To the eggs, add milk, salt, and enough flour to make a smooth batter the consistency of heavy cream; also add cinnamon and sugar. Add apples to batter. Spray hot griddle with cooking spray. Cook pancakes until golden brown on both sides and apples are tender. Sprinkle pancakes with granulated sugar and a little cinnamon. Makes about 40 3-inch pancakes.
