Ingredients

    TURKEY MEAT (LEAN)
    4 GREEN OR RED PEPPERS
    ONION (HALF)
    BROWN RICE (COOKED) .5 CUP
    1 TBLSPN OREGANO
    1 TBLSPN PARSLEY
    1 EGG
    SALT TO TASTE
    PARMESAN CHEESE (TO TASTE)
    TOMATO SAUCE (HOMEMADE OR STOREBOUGHT) A LARGE JAR WOULD BE FINE

Directions

Pre-heat oven to 400. Take peppers and cut a hole around the stem and scoop out seeds. ( if you like your peppers soft like me you can rub some olive oil on them and put them in the oven for 10 min by themselves to soften them). heat some olive oil in a pan and toss in your chopped onions til slightly browned. in a bowl combine meat, onions, and all other ingredients beside sauce. Stuff peppers with mixture (try not to pack them too tight) bake for 25 min. flipping once. then cover peppers with sauce, enough to cover bottom of dish. cover with aluminum and finish baking for another 20 min . top with low fat mozzarella if you'd like)

    Absolutely the best stuffed peppers since my stepmother's Hungarian ones that are too full of calories to eat! My husband loves them-he made them again tonight. We have had them two times now, and the servings give me two lunches too. - 3/3/10
