    2 boxes Uncle Ben's Long Grain & Wild Rice, prepared according to directions (minus oil /
    1 Tbsp extra virgin olive oil
    1/2 c onion
    3 cloves garlic
    1 lb. chicken breast, cut in bite size pieces
    1 box frozen spinach, thawed and drained
    6 oz container feta cheese
    2 oz chicken broth
    1 tsp. oregano
    pepper to taste


Lightly oil a 13 x 11 pan and prehear oven to 350.

While rice is cooking, saute onion in oil in a large pan. When onion is translucent, stir in garlic, and saute 1 minute.
Add chicken to pan, and cook until no longer pink. Season with pepper to taste and 1 tsp oregano, stirring well to combine.
Once rice is cooked, pour 3 cups of it into baking dish. Spoon chicken mixture over top, add spinach and feta and combine well.
Add broth to top and bake 20 minutes.

Serves 8.
