    2 Cups Chopped Chicken (cooked)
    1/4 Cup Chopped Onion
    3 Cups Cheddar Cheese
    1 Cup Reduced Fat Sour Cream
    8- 8 inch Whole Wheat Tortillas
    1 1/2 Cup Chopped Tomatos
    any other toppings desired (there are a little bland without added ingrediants0


Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish.
Mix Chicken, Onion, 3/4 Cup Cheese and 3/4 Cup Sour Cream.
Disperse Mixture exenly among the 8 tortillas.
Roll into enchiladas and arrange in a single layer in the baking dish.
In a saucepan, melt remaining cheese and Sour Cream. Pour over enchiladas. Top with tomatoes and whatever other veggies you would like.
Bake for 20-30 minutes or until hot and bubbly.
