Ingredients

    1 cup corn meal
    1/3 cup soy flour
    2 tsp baking powder
    2/3 cup low fat soy milk or skim milk
    2 egg whites
    6 tbs unsweatened apple sauce
    2 tbs granulated xylitol or sugar

Directions

Mix dry ingredients together. Stir in milk, egg whites and apple sauce just until moistened. Spray pan with cooking spray. Bake at 400 degrees farhrenheit for 10-18 minutes. Baking time will vary based on pan type and size and your individual oven.

To make spicier muffins, add a couple of finely diced jalapeno peppers and a little dehydrated onion flakes or powder.
