Ingredients

2 cups rolled oats
1/2 cup brown rice flour
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup brown sugar
1/3 cup canola oil
3 large egg whites
2 teaspoons vanilla extract
3/4 cup raisons
2 1/4 cups chopped walnuts
1/2 cup semisweet chocolate chips
Directions
1. Preheat the oven to 350 degrees F. In a large bowl, combine the oats, brown rice flour, baking soda, cinnamon, and salt.
2. In a medium bowl, whisk together the brown sugar, oil, egg whites, and vanilla extract until smooth. Fold in the raisons, walnuts, and chocolate chips. Gradually fold in the rice flour mixture and stir until well blended.
3. Drop the batter by tablespoons onto 2 large baking sheets coated with nonstick cooking spray. Bake for 10 minutes or until the cookies are golden brown.
4. Transfer the cookies to a wire rack to cool completely.
