    1 large onion, chopped
    1 can green chiles
    1 can red kidney beans (optional)
    1 pound ground beef
    chili powder to taste
    ground cumin to taste
    approximately 4 cups vegetable juice (V8)
    other spices to taste (I personally add quite a bit of black pepper, as well)


In a large pot, brown beef with chopped onion and drained green chiles. Drain meat, add drained kidney beans if desired. Add vegetable juice to desired consistency and season to taste. Bring all ingredients to a boil and simmer for 30 to 45 minutes. Makes 4 large servings, or can be divided for smaller portions. Ground turkey or leaner ground beef can be used to cut calories, and kidney beans can be left out for those who don't prefer beans in their chili.
