Introduction
This recipe is one I adapted somewhat from one I found in Real Simple magazine. It's pretty tasty and not to bad for you. This recipe is one I adapted somewhat from one I found in Real Simple magazine. It's pretty tasty and not to bad for you.Number of Servings: 6
Ingredients
-
1 pkg. whole wheat pasta (I used Trader Joe's Rotelle)
4 slices of bacon
1/2 of one yellow onion, chopped
2 cloves of garlic, finely chopped
1.5 cups of frozen peas
2/3 cup half and half (can be fat-free!)
1 cup Parmesan cheese
Directions
1. Begin boiling water and cooking pasta as directed on the package.
2. Meanwhile, cut the bacon into 1 inch pieces and cook in a pan over medium heat until crisp (10-12 minutes)
3. Remove bacon and place to cool on a paper towel lined plate
4. Discard all but 1 tbsp of bacon grease.
5. Add the chopped onion to the pan with the bacon grease and cook over medium heat for 3-4 minutes or until slightly softened.
6. Add the chopped garlic and seasonings to the onion pan.
7. In the final 3 minutes of cooking time for the pasta, add the frozen peas.
8. Drain the pasta and peas when done.
9. Add the half and half and 2/3 of the Parmesan cheese to the pasta pot- then add the onion mixture to the pot and stir.
10. Heat all ingredients together over medium heat for 4-5 minutes.
11. Top with remaining cheese and bacon pieces and enjoy :-)
