Number of Servings: 8


    2 eggs
    2 egg whites
    1 turkey cheddar sausage diced
    4 oz reduced fat cheese
    1/8 cup green peppers chopped
    1/8 cup onions chopped
    1/2 cup nonfat milk
    2 cups diced potatoes
    garlic powder black pepper and hot sauce optional


Preheat oven to 350

beat eggs and milk together in large bowl set aside

heat frying pan and saute sausage onion and pepper together until cooked and tender

shredde cheese and dice potatoes

add potatoes and sausage veggie mixture to egg and stir add 1/2 the cheese season with garlic powder black pepper and dash of hot sauce and pour into sprayed baking pan

top with remainder cheese and cover with aluminum bake 30-35 minutes uncover and continue cooking until lightly brown on top
