Introduction

This was adapted from a recipe I got out of the Oct. 2008 issue of Family Circle Magazine. I switched the veg. oil with olive oil and used Morton lite salt instead of reg. salt to lower the sodium. Ingredients

    2 tsp paprika
    1/2 tsp oregano
    1/2 tsp onion powder
    1/4 tsp cayenne pepper
    1/4 tsp Morton lite salt
    1/4 tsp black pepper
    6 tilapia fillets (4-5 oz each)
    2 tbsp olive oil

Directions

Blend paprika, oregano, onion powder, cayenne pepper, salt and black pepper in a bowl.

Pat fish dry with paper towels, then rub spice mixture into both sides of fish.

Heat oil (or use cooking spray if you want to reduce the calories even more) in large skillet over medium-high heat. Add fillets and cook 4 minutes. Carefully flip over with a large spatula and continue to cook another 3-4 minutes until cooked through & fish flakes easily with a fork. Serve immediately.

Makes 6 servings.
