    I large chicken cut into 8 pieces, skin removed
    1 large onion, diced
    1 green pepper, diced
    1 c sliced mushrooms
    4 cloves garlic
    1 (14 oz) can chopped tomatoes
    1 (14 oz) can tomato sauce
    1 c red wine
    1 c chicken broth
    2 tsp oregano
    2 tsp basil (or small handful fresh)
    1 tbsp grated parmesan
    1 tsp salt
    1/2 tsp pepper
    1/4 c flour
    1 tbsp olive oil


Generously salt and pepper chicken and dredge in flour. Heat oil in a dutch oven and brown chicken, remove and drain on paper towels Add onion, garlic and pepper, cook over med low heat until soft and onion is translucent. Add mushrooms and cook an additional 5 minutes. Pour in wine and reduce by 1/2. Pour in chicken broth, chopped tomatoes and sauce, herbs, and cheese. Add chicken back to pot and cook over medium low heat, partially covered for 1 hour. Serve over pasta. (not included in nutritional info).
