Introduction

i make this every year from my own garden. i get approximately 4 or 5 quarts per recipe. since i am diabetic, i try to can all i can, so i am not getting the "non essentials" from the store. i make this every year from my own garden. i get approximately 4 or 5 quarts per recipe. since i am diabetic, i try to can all i can, so i am not getting the "non essentials" from the store.

Ingredients

    approximately 25 italian tomatoes
    2 cups green peppers chopped
    2-3 onions chopped
    6 cloves garlic
    2 tbsp parsley
    2 tbsp basil
    2 tbsp oregano
    5 cans tomato paste


Directions

i put all the tomatoes, onions, green peppers and garlic in a pot and cook it down. because i can this, i run it through a "food strainer" or victorio. i add all the spices and tomato paste and cook in my crock pot for about 10 hrs with no lid, as you want it to thicken up. then i put in quart jars and seal, water bath 20 mins in boiling water, or pressure canner 10 mins with 5 lbs pressure.
