Introduction

Ingredients

    1 medium size zucchini, shredded, makes about a cups worth
    a pat of butter
    dash of garlic powder
    1/4 cup shredded low fat cheddar cheese

Directions

Shred the zucchini. Spray a small frypan with Pam and add zucchini. Sprinkle with garlic powder and pepper to taste. Let soften over med heat for just 2-3 mins, moving around gently. Top with butter for taste (can omit to reduce calories) and cheddar cheese. Let cheese melt, again moving around to mix.

    I had never thought to shred zucchini! It cooks up much quicker than slicing it! Tasted great with the cheese, then to save me a bowl in cleanup, I add brown rice to it...Awesome! - 4/18/11
