Ingredients

    Roasting Chicken, light meat, 1 cup, chopped
    Quinoa, 1 cup dry - cooked in 2 cups water & then cooled
    Miracle Whip Light Dressing, 2 tbsp
    Raisins, 1 miniature box
    Celery, .5 cup, diced
    Almonds, 1 oz (24 whole kernels) chopped
    Curry powder, 1 tbsp

Directions

cook chicken & chop & cool
cook 1 cup quinoa according to package & cool
mix all ingredients together & let blend in fridge 1 hour - enjoy over a bed of lettuce.

(you can go meat-less without the chicken & it's still really yummy)
