Ingredients

1 whole green zucchini squash
1/2 cup chopped onion
1 serving Kraft Macaroni & Cheese crackers (or reduced-fat Cheese Nips)
2 oz lean ground beef (OPTIONAL)
2 pats unsalted butter or margerine
Directions
Slice zucchini in half long ways. Use a spoon or melon baller to scoop out center "meat" of the zucchini leaving about 1/4 inch around the edge (like you are making a "boat"). Put zucchini pieces and chopped onion in a skillet on medium heat along with a small amount of the butter. Cover to steam for 2-3 minutes to soften.
Place the zucchini boats in the microwave for 2 minutes open side down to hold in steam.
Add the crackers to the skillet and recover for another 1-2 minutes. Using a fork, mash the zucchini and crackers to break it up into pieces as small as or smaller than the onion. Once the zucchini is softened and roughly mashed, add the ground beef. Stir frequently to keep it from sticking while beef cooks through.
Fill the zucchini boats with all the ingredients from the skillet. Bake at 350 for about 5 minutes until golden brown.
