This is a great vegetarian meal full of flavor and substance. This is a great vegetarian meal full of flavor and substance.

    1 cup dry red kidney beans
    1 cup long grain brown rice, uncooked
    1 can chicken broth
    1 med onion, finely diced
    2 garlic cloves, minced
    14 oz. package meatless crumbles (like Gimme Lean)
    1 can petite diced tomatoes
    2 tbsp. Frank's Red Hot Sauce


1. Cook beans according to package directions. Cook rice according to package directions, using chicken broth in place of water.
2. Spray a large saucepot with olive oil cooking spray. Saute onion for several minutes. Add garlic and saute until fragrant. Add meatless crumbles and stir to break up.
3. Add diced tomatoes, beans, and rice. Stir. Add Frank's Red Hot sauce. Heat through.
